Good luck on the 225 cook.
From what I've been finding, one basket lit from the side will hold in the 275-300 range (with 300 being more likely) for about 2-3 hours and drop to about 275 for a couple more hours.

For me to be able to keep it in that range though, I have to keep the bottom vents all but closed. I haven't tried anything higher yet, both times I've been trying use it more like a wsm than a grill.

I'm going for higher temps tonight, but I think I going to just spread the coals and forego the baskets.

What I have noticed, and that I like, is that the baskets get the coals up close, if not touching the grate, which will be awesome when it come times for steaks or anything where you want a good sear.

Good luck and keep us posted on future experiments and I'll do the same.

By the way what were you cooking this last time?

Thanks WNC, I am going try to use less coals in the minion as a way to get it
but that is next week
I am happy about the 350 experiments,
trying low and slow is my next goal, those experiments may take a while and require some thinking outside the box,
If we were meant to grill with gas then the garden of Eden would have had a pipeline
