Nice job on the few kettle cooks..... I liked the Jerk Chicken and the Jerk Ham.

I used a common dry  Jerk Spice it was a bit salty on the ham. Id make my own mix next time and omit most if not all of the salt. It took a bunch of pepper jelly to calm it down but my taste palate is fairly sensitive to salt. Great fried in a pan with some over easy eggs though.

wish I had more pics of the chicken after a 30 minute rest I had about a cup of juices per chicken. They were brined in ginger beer overnight and the skin was like a potato chip.
