One of my favorite foods is jerk chicken.   In Tortola there's a food stand called Dario's Jerk Center which is great besides a hilarious name.  The idea here is to make a fresh jerk marinade with as hot as you can stand real scotch bonnets that I grow plus fresh thyme.  After its marinaded I cook over coals on grill grates and up to temp on the cool side of the grill.   Then I make a simple sauce with reserved jerk plus tamarind paste, molasses and ketchup.  This is brushed on at the end and briefly carmelized.
