So what is everyone's favorite wood for smoke? I know everyone is different and certain woods work better with certain meats, but what do you tend to grab the most?

I love apple and cherry.

I like what tends to be local. So, no mesquite up here. Very little hickory.
I do want to try my hand with some oak.

Apple and oak used the most. Hickory every now and then.
Looking for--- a yellow mbh any size, sequoia ( I know I am dreaming), avocado any size, brownie any size.

Thinking about trying pecan. Been using a lot of apple and hickory.

If I only had to use one wood for everything, I would choose Oak.  2nd would be Pecan.    Both are good all around for beef, chicken and pork.

it's a little different for different things.....

Long smoke, oak or oak & apple.....or black walnut....shorter things like chicken, ground meat, then plum, cherry, apple.....

Pecan for pork anything and chicken sometimes, Cherry for cow meat and chicken too. Apple and Cherry for chicken and game hens. I want to try Maple, Peach and Apricot for pig meat and some Red Oak for cow meat.

Going to get some pecan today. Cooking up a 8lb chicken as a trial run for thanksgiving. Couldn't find any small turkeys right now, I will order one for thanksgiving from the farm.
