KFC w/crumbs + starch
« on: July 18, 2014, 09:30:44 AM »
I'm posting here because my attempt is to share the sight of KFC with a dry mix that includes corn starch.

A whole of chicken was cut and placed in a bowl with enough milk to cover the pieces.
Then, around 120 grams of corn flakes crumbs, three spoons of corn starch, salt, cayenne… mixed old school with a fork.

I should have salted or seasoned the chicken at this time, I know better now.
But then I just took each piece and made sure it was completely covered with the mix.
It looked dry, so I brushed them with oil; it didn't took much.

Potatoes, lil'oil, salt and pepper on both sides.

In the kettle.

I think this was around 40 minutes later. No turn.

Pay no attention to the temp on the therm. That's when I found it needed calibration.
By the way, I tried with cold water, and then thought it needed to be done with hot water instead. Still not happy with the therm.
