I have been playing with the idea of a stand alone mod that would work with Bisbee (my Copper SS performer). Argentflame recently provided me with a SS cart to allow the project to go forward. The concept is to increase overall counterspace, provide more grilling, smoking, etc area, and yet make sure that I can still use my existing covers.
Here is Bisbee and the new cart. In its current configuration, I am using my 18.5 WSM, however, I could just as easily drop in another performer bowl (two grill set up), put in a shelf for a mini WSM, (mini smoker setup), or just about anything else. I like the flexibility to continue to tinker.
Here are the two carts unattached. In this configuration I can cover both Bisbee and the WSM using their existing covers:
Here they are attached. I use a simple cotter pin on each side to fasten Bisbee's extended shelf to the other cart:
I had a piece of 10 gauge steel fabricated for the base of the WSM configuration. It is shaped like a "T" to provide attachment points for two legs of the WSM, with a narrower section that conforms to the existing storage rails:
I drilled holes in the bottom of the WSM legs, though the steel, and through the cross support of the cart. Two cotter pins run through the holes. This prevents the WSM and the shelf from moving, yet by pulling the pins, everything can be removed in seconds. The fuel door of the WSM is fully exposed at the end of the cart for adding water/fuel as necessary:
Miles of work space. This is very handy for food prep, but also very handy as a place to set the top/middle sections of the WSM on while tending food:

I am currently working on a copper colored WSM mini smoker (Sierralita), and will fabricate a shelf for the cart for that purpose. The shelf will be held in place by pins through the existing holes in the cart that hold a kettle in place. Other plans include some storage space mods under the SS table for fuel, gloves, knives, etc.
