Simple Kabob's Tonight
« on: February 28, 2014, 04:38:41 PM »
I've been wanting to do up some Kabob's so that was the plan for supper.
Beef chunks rolled in bacon, potatoes, pork, and fresh pineapple.

And on the performer...

Wanted to try some veggies with them so broccoli and zucchini slices tossed in butter and seasoning salt. Thanks for the idea Mmmm!
These went on the MBH kettle.

And very simply plated.

Was a little disappointed, the pork especially was a little dry... But the veggies were awesome and I'll try something else tomorrow :D

If the pork was dry, maybe you should try cooking them on the indirect side until they get near temp and then sear them at the end.....you won't dry out the meat over the direct coals that way since the meat is in such small pieces.
If it needs to be Heated to be Eated, I can do it on my Weber!

kabobs are a tricky animal. Everything needs to be proportional to cooking time.

That could be why the pork hunks were a little dry.

Best if all protein was on separate skewers. Veggies on another.

Yes, you lose the traditional kabob flare but in the end does that matter over taste?

Yeah, they look pretty good, but if you have to go a bit long to say, get the bacon how you like, sometimes the other stuff ends out a bit over the top.....

Another possible strategy is like this:

the chicken & bacon stuff is over coals & the high risk shrimp is off to the side.......

Noticed the lighter meats like pork / chicken maybe need a marinade to keep them juiced, too.....

I'll slab zucchini thicker on a beef one (than say, chicken) so the slightly longer cook time matches up better too......

Great way to play with food.....kabobs, man..... 8)

Have Fun !!!!
