http://s1277.photobucket.com/user/2wheel1/library/Mobile%2520Uploads I cooked an 8 lb. chicken Friday night and came out great. Just some coarse salt and ground pepper inside and out. Had cowboy lump on both sides in baskets I held temp about 250 the whole time and took about 3 hours. Skin was great and chicken had a great flavor. More to come.
