Low and Slow Tri-Tip

The XC and I decide to do a tri-tip for dinner tonight. We marinated a 3lb hunk of meat in soy sauce and Stone Coffee Porter. Then we rubbed it with cracked black pepper, kosher salt, garlic, Worcestershire powder and chipotle powder. Set up the 2-1 snake method with mesquite chunks and put the meat on. We made corn with blue cheese and buffalo wing sauce. We pulled the tri-tip at 5 hrs with the internal temp at 175. We rested it for 15 mins then sliced. It turned out perfect!! Uuummm ... I often wonder why I live where I do .... I can't get no tri-tip up here.

So, the soy didn't cause it to dry out really at all?

I was concerned about that on a longer cook.....bad experience as a child, I guess...... ::)
"If you want it fancy there is BBQ spray paint at home depot for that. "
    Covered, damper-controlled cooking.....IF YOU PLEASE !!!
