Earlier this week my roommate said his gf requested brisket for her birthday. I didn't balk at the chance to have more practice with a hot and fast brisket. So i take my roommate to restaurant depot and I pick out a nice 13lb packer (and then 2 15lb packers for my labor day cookout, I was going to buy the 2 packers) and he bought all 3 of them!
Of course I have been cooking this weekend doing bulgogi on Friday, Dino bones on saturday, and today I fired up the kettle to do a brisket!
I trimmed up the brisket last night and then came home at lunch to setup the kettle and get the brisket on the fire. I had everything set to go in my 1 hour lunch break. I couldn't get pictures of the setup because i as in a hurry. Cooked at 325-350 degrees for 6 hours.
But this is the finished product for dinner!

After a busy weekend of working and also doing bbq. I am spent. Although it could be the fat man syndrome talking. Going to try to fight this sleepiness off.
