Reverse seared on the Off-road 18" FrankenBullet. This resides at my SIL's place and we smoked them with Knob Creek Bourbon Barrel chunks indirect then seared direct. Very quick cook and they turned out great. This started out as an 7.5# Choice Costco Tenderloin trimmed up to 4-6oz servings. Half were seasoned with a Thermoworks Prime Rib rub and Loot n Booty Beef rub.
