I inherited a 3 burner spirit, rebuilt it and want to make a griddle for it made out of 1/4" steel.

My question is, would you make a griddle to sit on top of the grates or one to sit in the grill in place of the grates and why?

Thanks in advance!

Chesapeake Weber

I'd look to Weber's current design as a clue. They now have the griddle to drop into some of the gas models. I believe they all have you take the grates out and drop the griddle in their place.  However, not sure how high above the burner they sit.  If leaving the grates in place under a full griddle, the grates may over heat and warp.

Weber just introduced a full sized drop in carbon steel griddle for the 3 burner spirit that is very nice! Its a direct drop in replacement for the standard grates but has been designed with plenty of air holes for breathability so that you don't choke off the burners. You could also design one to rest on top of the existing grates but just make sure to leave about a 1" gap around the entire perimeter to avoid the same potential issue.

Thanks! I may just check out Webers new griddle in that case.

Anyone have one that report on it?

Based on feel and weight alone it appears to be of very good quality. Also love that its true carbon steel like the stand-alone flat tops so it should hold up very well with proper care. Worth checking out for sure.
