Lightning Strikes Twice

I was in Costco earlier in the week and recalled a posting (sorry-forgot who posted) where they had found a USDA Prime Rib roast marked as choice.  Well guess what, after sorting through the case a little I found this!

Got it all trimmed and tied up nice for an overnight dry brine for tomorrow.

I will be pawing through the meat case from now on!
