raining here in oz on saturday
so picked up the ribs i had hanging at the butchers for 12 days from slaughter





deciding what q to use .... decisions decisions

going on my new to me $60 18' WSM that i havent used yet

That's interesting. It looks like the beef equivalent of spare ribs. I've never seen them 'round here. I think they usually get cut up as short ribs. It looks good! How long did you smoke it and how did you like it?

Ok golly those look great! Now do you treat them any different than pork ribs when cooking? Are we looking for the same aspects when they pull back from the bone and bend test? What about smoke, does one tend to be better for beef or personal preference?  Sorry for the list of questions lol I haven't cooked them before.

Those ribs look great Dave! They look really moist! Top result. What did you smoke them with? I did mine with a mix of cherry and hickory.

$60 for a WSM? I wish I could find one for that price. :)

I think the ribs might be the 'plate' cut in the US, maybe back ribs?
