Tri tip last night

Man I love this cut. My butcher seems to cut the tips off so the shape looks a little different and he leaves a thick fat cap on. I cut the fat cap off completely and removed all silver skin. Cooked high heat indirect until about 95 degrees then seared then finished for a couple minutes indirect until about 120 in the thickest part. Salt and pepper only.  It was a huge hit. Fried up some sweet potato fries in some beef fat.
