I was lucky enough to get a hold of a whole slab of this at an exceptional price.



Smoked indirectly over lump charcoal and cherry wood until medium rare and then finished off with a sear directly over the hot charcoal.



It was so juicy, the flavour and texture where all on point.



Offering to the Weber gods.



The security boss got a taste.



and so did his right hand man.



third in charge had a bit as well.
