Beef tongue, any tips or tricks?

A couple of my buddies threw down on a whole cow, and gave me the tongue. I've never cooked one, and only eaten it once, in culebra, Puerto Rico at Zacos Tacos.

I'm leaning towards tacos with this, mainly because that's the only way ive had it, not opposed to a different dish.

I have kettles, rotisseries, and WSMs. I have know idea what the tongue should be prepared like, or how it should be cooked though. The meat in the tacos I had was extremely tender, almost too tender if that makes sense, Idk.

I suppose I could have googled it, but I figured someone here has done it before. Thanks in advance!

If I remember, you have to boil it to peel the outer skin off the tongue. Then prefer the inner meat how you want. I also have had lengua tacos and was very impressed. I tried to grill a tongue before with the outer skin on...very gross. It tasted horrible and was unchewably tuff.

Rinse the tongue in cold running water. Place it in a large pot and cover it with cold water. Bring to a simmer and cook half way, about 2 hours (the base should be fork tender, but the tip still a little firm).
Remove from the heat and allow the tongue to cool in its juices. When cool enough to handle, peel and discard the skin.
Cut the tongue in half the long way. Coat with softened lard or vegetable oil, lime juice, salt and pepper.
Grill the tongue over medium heat until tender and lightly brown. Slice thin and serve.
Serve with lime wedges, roasted corn and chili powder to taste

Step one.  Take it out of the freezer.

Step two.  Feed it to the first unsuspecting friend you have or the dog.   ;D
ISO: 18" & 22" Lime, 22" Cado, Plum SSP, Clean & Colored 18" for Midget Mod, and the usual Grails.

I was wondering what kind of “friends” would slaughter a cow and just give you the tongue?! Might need some new friends....just saying...

My wife cooks it with a recipe she got from a German friend. It is delicious!  She boils and skins it,then she makes a gravy with some wine and mushrooms. Like eating the most tender beef you ever put in your mouth.  We never had it smoked.
As an aside, if you ate "culebra" in Puerto Rico, you were eating "snake".

@Smoke Signal  Snake island is right around there I think! Edit: I guess its off the coast of Brazil. There were tons of iguana in culebra, so maybe that's what it was lol.

@bbqking01 i appreciate the advice and agree on needing better friends, but I just play the hand I was dealt lol

@jhagestad the tongue is separate from the body, so I can do whatever I want to it now! Haha

@ReanimatedRobot cone on down buddy, I am making some "beef" tacos!

They technically would still be beef tacos.  Suppose I won't be eating anything unless I see you prep it. :p
