Eggplant Parmesan

Tried to bake the eggplant instead of frying and didn’t preheat long enough and got an undesired Smokey flavor. The good news is the 26 with lid barely cracked did a surprisingly good job browning the cheese.

I've cooked several EPP on my Weber Kettle with excellent results, the first was a little smokey.  I grill my eggplant before baking, EPP is one of my favorite things to cook and eat.
