So a couple weeks ago this 18" WSM pops up on letgo as a make a offer. So, I offered $50. Accepted! So I finally got around to cleaning it out, tossed a couple new grates in it, and put a hot fire in it to kill anything else off.
So today I smoked a chuck roast for chili, and a #7 pork butt because they were on sale. Food turned out great! I do have a question though.... is it normal to have condensation dripping off the bottom like this?  It ended up being quite a bit that dripped.

I don't own a WSM but your post is inspiring me. I have no idea about the condensation. Are you sure it was water and not grease drippings?  Nice looking cook.

Dont think it was grease.... I didn't see any tracks higher up the bowl...

I went back out and looked at it. It actually had a light trail coming from a vent. One of the vents were kinda stiff. Maybe some old grease burning out.... ?

@racedvl , after your last comment, I would venture to say yes, most likely grease melting out.... I might use a torch to warm, not get terribly hot, don't wanna pop porcelain, and soften the grease out. you could also use some dental floss, unwaxed, to help it along.  Also, Great score, and excellent looking food!!

It's grease that usually exits a vent. I have seen it a few times with meat and an empty water pan. Not sure why it happens?

racedvl

Yea,  it looks like grease.  I used water in the water pan.

Ok, it was totally drippings coming out the lower vents.

You're missing the bottom ash pan, get a new one from Weber. It will help save your deck , as well

Homerdog

I meant to say heat shield, not ash pan.
