Question on Ribs BB vs Spare

We had a package of spares in the freezer and I told wife to pickup another package of spares. I even pointed them out on the store flyer. She brought home baby backs. How will it work to smoke baby backs and spares together on my kettle with SnS? Anything I should watch for?

I'd run two cookers. BB will be done 4-5 hours, Spares will be 6-7

Agree with separate cookers, grills. Time depends. I usually do baby backs longer than the spares. That also depends on trimming, and the thickness of the rib...190 f is what you shoot for then off and covered for .5 to1 hour.

St. Louis cut the spares. They will cook up similar imo.

Just sold my 2nd cooker so don't have an extra right now.

Okay tell her they take different times... then say you need another grill. Problem solved.
Wife said "No more GRILLS in this house!" So I bought a 2nd house!

Every time I've done St Louis cut and run the same time I do B.B. ribs they never render like I want them to. I had to cook the last rack 6.5 hours to get the probe tender that I wanted.

I would send her back for more back ribs and put the spares back in the freezer...

Hell Fire Grill

Put the spares on the grill...let them cook for an hour or so...put the BBs on
You can't always get what you want....but if you try sometimes you get what you need
