Thanks @Mikerocksthered for getting me addicted! He got me into pepper jack, but I think mild cheddar is my favorite now. Two & a half hours is all it takes; now my arteries will be clogged.

In the words of Uncle Buck, “I've been eating a lot of cheese for some reason. I don't know what it is, I've got a craving for the stuff. Think maybe that's an allergy or something...I don't know, I can't get enough cheese. I feel like a big mouse."
