Snake River Farms waygu NY strip, spicy salami wrapped asparagus, grilled meyer lemon with chimichurri. Reverse seared on the mid 70's yachtsman with slow N sear and drip N griddle... dinner is served.

How do you like it? My local supermarket (Safeway, here in Northern California) just started carrying it this week. I think NY was $29/# and the RibEyes were like $32/#.

What incredible marbling these things have, especially in person. Though i think that my local supermarket could have cut them a little thicker than what they had on display.

Same day they also started carrying "Open Nature" lump charcoal. And the week before, we got limited edition Kingsford with cherry wood.

Love it... though I typically piggyback on the restaurants orders to get mine. I picked up my 4 pound chunk pre trim for 19 a pound. Honestly though a 10 dollar mark up is not that bad.

The butchers cut it too thin for my liking. They look to be ~3/4". I'll have to have then custom cut a slab.

Steaks look great, but that's some good-looking wrapped asparagus too! I've never thought to put my smoking one on top of the grates. I take it this causes the wood to burn slower, reducing the amount of smoke it produces?
