I picked the OTP back before Orthodox Lent (no meat for 60 days)and have not had a chance to use it.

Tonight I broke her in with some tri tips.

Super juicy and medium rare in the thick medium well done for the kids in the thin parts.

Same statement, different thread......

" I gotta get schooled........gotta get schooled......on the high heat  !!!!"

I used charcoal baskets for the 1st time the other day & it was a harrowing experience......

I need to really pay attention to a bunch of  people around here that know what they're doing !!!!

Nice Cookup !!!!

Do 2 minutes per side over the baskets then move them to the sides of the grill and let them cook the rest of the way.

I think I just loaded too much & it SEEMED that the baskets concentrate the heat in a tighter pattern....... am I imagining things or has this been your experience also.....?

Seems like it would work grate for steaks / chops/ searing of all kinds.....

Sometimes I just use one basket to keep the temps down. I think the design helps keep the air flowing around the coals.

Or do a reverse sear by warming away from the coals and then finishing over the heat.

I've done that too, most recently at my son's house to smoke some spares. It works well. For long smokes, ou need tpo replenish the charcoal from time to time.

I would not have waited. You can grill too many different veggies as well.
kettles, smokers...
