Just a little night smoke . . .  I had a piece of salmon belly that I had trimmed off of a filet that I cooked, so I decided to make up a little nova lox using third eye's recipe as a guideline.  After a 12-hour cure, a 12-hour brine and a 12-hour rest, I threw it on a rescued 18 with some cherry pellets in the A-Maze-N tube. 





The only thing I'd do differently is make more . . .

Wowww that looks so good!! I love lox but never considered making it myself. This is definitely on my very long to-cook list, but has been bumped up near the top! Thanks for sharing.

Perfect job for the 18. Maybe even with the Smokey Joe. Larger fatter trout done in the same way is also fantastic.
