I was held over at work and came home later than I wanted.  I did not realize that the wife had already got some chix thighs ready cook.  No problem!  I fired up the copper with some left over coals from a rib cook and got to it.  Banked the coals on one side and cooked indirect with both vents wide open.  Used a small amount of applewood chucks to smoke.  This is the first time I smoked chicken.  I like the color and the smell as well as the taste.  Will definitely do it again.  When the cook was done I was rewarded with an awesome sunset.

Very nice!  I need to go buy some chicken thighs.  Nice to see a sunset.  It's been pretty dreary in my parts.
