Hey everyone, I'm going to do some chickens on my roti this evening and I have three of them. I know from experience that three is just a tad too much to put them on lengthwise in the normal orientation. But I was wondering about putting three of them on crosswise, like they do in some commercial rotisseries. The the forks on the ends and tying the center one to the other two I should be able to make that work okay.
Has anyone ever done them this way? Would it make a difference with drying out? When I say that I'm thinking about the typical indirect setup with the coals in baskets on both sides. Seems like the breasts would end up being over the coals that way. Maybe I should put the coals in a different arrangement.
Any thoughts?
