A grocery store corned beef soaked to desalinate, then dry rubbed with white and black pepper, adobo, and a touch of salt for three days in the fridge.

Then on the WSM with hickory for 6 hours.

Then steamed for two hours.
And now this

My only regret with this one is that I didn't trim the fat.  It's not bad by any means, just more than I like.

@Travis We should do a meet up meat up at some point.  Maybe a WKC STL pizza rueban blowout BBQ extravaganza.
