Steak night

My boss gave me 4 New York strip steaks on Friday because he knows how much I like to grill and he's just an all around great guy.  I also had some scallops in the freezer.

First I smoked some garlic on the performer and made some compound butter. I seared the scallops inside on the cast iron then put them in the oven just to stay warm. I didn't want to be cooking 2 critical things at once. Then I devoted my attention to the steaks on the performer. I used olive oil salt and pepper on the steaks then topped them off with the butter the last couple of minutes. 2 steaks were seared then cooked and the other 2 reverse seared. This was just a default by only being able to sear 2 at once. The performer is great for cracking the lid for extra heat because the lid bale will prevent accidental lid drop. It was also very nice starting the coals right in the baskets without the need of the chimney.  Very fun cook and the butter is fantastic.

Yes it is and I'm starting to really enjoy it now that I've used it a few times. It's great being able to give the baskets a shake to clear the ash from the last cook and add a few more briqs to each one and fire it right up without having to break out the chimney. I think I use less coal this way. I really like my 26 to have the room to cook a full meal but this is quickly becoming another favorite the more I use it.
