Spent the week at the Azul Sensatori in Riviera Maya (Cancun). They do a daily beach BBQ that had staples (burgers dogs etc) and some daily specials.

They specials were prepared on these:
Dual ranch kettles cranked out some amazing lunches.
One day was jerk chicken and roasted porkloin

The next was some grilled local fish of the day
Day 3 was BBQ chicken and pork. The pork was cut up but cooked whole hog style skin on.

All were great cooks. Never got to see a ranch in person let alone 2.
