0330 in the morning, heating up the WSM for a long Sunday dinner Brisket smoke.



They just don't understand why we put ourselves through this.

Ha, I started mine at 11:30 PM hoping for a 12 hour cook and a three - four hour rest for dinner around 4:00 PM today,,,, hit the sheets at 1:00 when the smoker settled in at 230*. got up at 06:00 and brisket was at 170* IT. Wrapped in butcher paper and Ended up at 205* and probe tender two hours later. Wrapped and resting now. Texted my son that dinner will be early at 3:00,,,, but very worth the effort!
it's all fun!

I actually like getting up early or staying up late for long smokes.  Sip a cup of strong coffee and enjoy the solitude. 
After the long cook, I also love pigging out and falling asleep right afterwards.

You can't always get what you want....but if you try sometimes you get what you need

this "hobby" AKA Weberitis, is not necessarily the "fun" part, all the colors styles and accessories will make ya crazy trying to amass them all ....The FUN part is the COOKING on them!..LOL
