15” lodge carbon steel

Just got my birthday present. Can't wait to try it out for paella or as a griddle. I cooked a few eggs on the stove. So far so good.  I have been wanting a paella pan and a 17" lodge cast iron skillet. After some research, this seemed like a good compromise.

I didn't either. I stumbled across this on amazon then looked into it further.

Breakfast today. I need to dial in my coal set up for this. I had it way too hot but I was still really impressed with how it performed straight off the shelf. I didn't do any additional seasoning other than a quick stove top seasoning last night.  I'm pretty sure I'm going to really like this.

I may have warped it. I'm not sure if it was like this before I used it or not. It still cooks just fine but it's a little annoying. Anyone else with carbon steel pans have this issue?  Maybe it suppose to be like this. I emailed lodge to find out.

Maybe they intentionally warp inward a tiny bit to keep from an outward warp that would cause the pan to spin?

After some additional testing, I think this is intentional. As the pan heats up, the diameter increases and the bottom flattens.

Just a follow up, lodge customer service is top notch. They are sending a replacement. The skillet works fine. I was just inquiring if it should have that much concave.  Evidently not. They said heat it up slowly.

Yep, heated up way to fast on a 18000 btu burner, no customer service,  switched to lodge having had visited the factory store 3 years ago and got a taste of their service, told me a lot about using steel compared to cast iron, plus you can buy factory seconds in the store pretty cheap, I love that store

I got my warranty replacement that I didn't ask for but they insisted. I used the first one for one week. In that week I managed to warp it then straighten it with persuasion of heat sledge hammer and 2x4 and continue cooking. Here is a comparison of the new pre seasoned out of the box and one week of hard use and abuse. I think it's coming along nicely.
