....and on the Cajun Bandit ring with the EZ Que cradle.

First the Porchetta - 11 lb belly and two 1.5 lb Tenderloins

Took half and set it in the 6" EZ Que Cradle

Filled the Hunsaker Smokers Vortex Firebaket with RO Lump along with some Apricot and Peach chunks.

Hot 'n Fast is how we're rolling!

2.5 hours with a 45 minute rest and we are ready to eat!

Juicy porky goodness!

Stay hungry my friends!

Yes, I did. Scored it and rubbed with Kosher salt and the spice mix

It is a Vortex Firebasket from Hansaker Smokers. I've been using them in my drum smokers. They made one especially for the 22" WSM (basically the same for the drums without legs and the ash pan)

You cook direct with it without the WSM waterpan. High heat temps with very little effort and hardly any intake. I'll be doing a lot of cooks with it post on my fb page.
