These are lamb ribs. Or lamb flaps. Or lamb breast plate. All depending on what your butcher calls them.





And regardless what your butcher calls them, most guests will call them OH MY GOD!!!!





Pork belly over vegies soaked in beer juice. Then all the drippings and chunky bits in the pan were the basis for a kick ass gravy.

It was probably one of my better efforts. The beer evaporating out of the pan and keeping the belly moist....and the dripings coating the vegies as they roasted.....mmmmmmmm
