Scored a Wild Norwegian Salmon from The Restaurant Depot for $2.25/lb. A deal I couldn't refuse! (At least that's what I told the wife!)

All dressed and ready for the party! - Olive Oil, Sea Salt, Pepper, Shallots, Fresh Rosemary, Fresh Thyme, and plenty of lemons.

Too big for anything other than the Ranch Kettle! Just a few Alder chips for a light smoke.



Now the question is what to do with all this cooked salmon? I would say close to 10lbs worth!

Answer #1 - Saturday Night's Dinner Salmon "Philly Cheese steaks" - salmon, broccoli, onions, peppers, American cheese on a Liscio's Roll


Answer #2 - Sunday Night's Dinner Honey Bourbon Salmon Filet over cheddar rice and green beans


Answer #3 - Monday's lunch - Salmon Caesar Salad


Answer #4 - Monday's Dinner - Grilled Salmon Cakes over rice with Teriyaki Broccoli



FINALLY DONE! Three dinners for my family of 5, a lunch salad, as well a plate full eaten right off the grill on Saturday.  Needless to say we are DONE with salmon for a while!

Did you fully cook the fish whole, then reheat? Or was the first cook more of a smoke/cure then it got cooked again?

Also do you have a recipe for those salmon cakes?

Thanks Idahawk! The cheek meat didn't make it to any plate! I ate them as I was "pulling" the salmon! Salmon hash sounds great! Goes on the list for the next time for sure!

I cooked it whole just rare enough where it started to flake. I knew I would have to reheat so I didn't want to dry it out. My guess would be about 20min at around 350 or so.

Salmon Cakes -
1lbs salmon (flaked)
1/2 cup seasoned bread crumbs
1 egg
1tsp old bay
1tsp black pepper
2tsp Worcestershire sauce
1/4 cup chopped onions (fine)
1/4 cup chopped red pepper (fine)

Combine all ingredients well except the egg.
Add egg once combined and shape into patties.
Set up your grill for indirect high heat.
Grill indirect for about 8 min each side. If you like it a little crispy on the outside place over direct heat for a minute or two but be careful. The breadcrumbs in the mix will burn pretty quickly.

Good to see you & the RANCH as always !!!!

We used to go by the Sunday farmer's market here & some fellow would have fresh caught (before the sun came up)
salmon coming from the Delta / San Fran. Bay as they were headed up to the rivers by us.....20~30lbs each.....$2.50 / lb.  man I miss that kind of stuff......just doesn't hardly happen now that "fish" has become a "healthy" food.......... :'(

I've butterflied big ones & laid them out on a 22" with the tail hanging out from under the lid.........
