This has been my favorite appetizer while waiting for a longer cook to finish. Super easy but a hit every time.
I mix even amounts by volume of crumbled blue cheese and chopped candied pecans (I've had a hard time finding candied this time of year, but found adding a tablespoon or two of brown sugar and a teaspoon of salt to about 1/3 c of chopped pecans was a decent sub).
Then I take medjool dates, pit them by cutting a slit lengthwise, and then stuff them with a spoonful of the blue cheese and pecan mixture:
Then, wrap each in bacon or prosciutto and use a toothpick to hold together.
Then smoke or cook on indirect until the bacon is cooked through - around 20 minutes or so cooking 350 indirect or around an hour on the smoker at 250. It was really convenient to throw them on the smoker while I was waiting for the butt to finish, but I think my favorite has been cooking them with some mesquite chips at 350.
The hardest part is trying to share.
