Man I love these. 20 briquettes in a charcoal basket, a chunk of hickory, bottom vent open and top vent almost closed gives you maybe 225 - 300 for long enough to get these done.
T-Bone cooked medium rare
These are the best beans I've ever had. Smoked about 1 1/2 hours on the kettle and then had to leave so threw them on the Green Mountain Grill pellet smoker to finish up since I wasn't set up for a long smoke on the Weber. You can find the recipe here:
