Pork belly burnt ends

All I can say is I followed Matt Pittman s method from today video, minus the pepper jelly. I don’t have any. Oh and I used Hot Honey Hog. In my SmokeFire for three hours in metal sheets.sauced one pan with SBR spicy, and the other with Kraft, brown sugar, sweet. It is soooo good!

This is so timely - I'm looking to do these on my Gravity 980. I want to do one sweet and one more of a pepper profile.

My son applied some black pepper to a couple of these. When I do these again I will be using black pepper. The pepper went well with these.
