Open cook steaks

No lid. Bottom vent closed. No thermometer. Just cook until desired color on the outside and always get medium / medium rare on the inside.   Always fun to do and easy.

Yes sir. Sams sells 6 packs of sirloins and I'm always impressed how good they are. Steak and everything else is getting expensive. Ribeye was $13 per pound.

I did a combo open/closed on my Summit on Sunday. Got her nice and hot and tossed them on a couple minutes, opened the lid and within seconds I had flames licking at the steaks....best flame sear I've gotten yet! Close lid and flames subside

Nice.

I was running short on time last week on steak night.  Typically I reverse-sear, but it was getting late so I did exactly this.  Cranked the kettle up as hot as she'd get, did 4 minutes per side, then 1 more minute each.  Perfection.  Sometimes simpler is better.
