Just cutting up some ribeye steaks today!

Very nice. I've been wanting to get a whole one and cut my own steaks. Just haven't pulled the trigger. Are you planning on vac bagging and freezing or are you planning on cooking them all

2 in the lodge skillet today (windy and rain today) and the rest in the freezer, I have another 6.5+ lbs chunk to cut up later this week. This is the only way I can easily get thick ribeye steaks here.
I scored a new contact this week in the way of a butcher 2 miles away that can get whatever I need and it's so fresh that it's still warm. Cows walk in the back door and steaks go out the front door! I'll plan my first trip there next week.

How thick are you cutting these bad boys? Looks like 1.5-2.0"? I'm very lucky in that our local grocery store has an incredible meat department. Know all the butchers and can get things cut to my preference.

Those look absolutely amazing.  I gotta get me a vac sealer and do this!

I cut them using the super scientific method of knife flip steak cutter.
I lay the back of the knife on the fresh cut edge and roll it up on the sharp to mark my next cut. so Ja .. about 1.5 - 1.75" cuts.
There is a good reason I don't trim my steaks with a meat cleaver.🤣

That slab of rib eye was 45 euros?  I can't tell how many pounds it is but that looks like a good deal. Depending on size a similar chunk of rib eye here is around $100

Works out to 6.698 pounds
Euro is about the same as the US dollar right now.
$51.32 for 6.698 lbs = $7.66 per pound if I did that right.

That's still decent. I can't remember what Costco and sams is but I want to say at least $8-$9 per pound.
