I like the twin Vortex action.Made for a real purty bird.
Brined for 4 hours with salt, lemon and garlic. Started the cook at 450F for the first 15-20 minutes then dropped it to 375F. Once it reached within 10 degrees of target internal temperature, i opened all the vents and finished cooking at 425F. Brushed the bird every 15-20 minutes with duck fat oil infused with annato powder, white pepper and salt.
What is annatto flavor like? Or do you use it just for color?
How do you make this oil that gives great color I have annatto paste will that work
