Independence Day Reverse Sear

Kroger had a good deal on some thick cut bone in ribeye so we grabbed a pack last week and threw them in the freezer. They are big enough that my wife and I will share one. I always do my steaks reverse sear, it's the only thing I'm really passionate about when it comes to grilling. There's no other way to do steak IMO.

We're pregnant so I was going for medium well, it's usually medium rare but she isn't comfortable with that. Happy wife........

Cooking indirect to about 120 IT



Resting on a paper towel while the grill gets hot. Used another towel to dry off the top of the steak.



Sear side 1 using the lid to control flare ups and the cold grate method.



Sear side 2.


Pulled and rested. Checked temp all across and probed at 150 with the Thermapen. Still resting while the last kiddo goes to sleep. Trying to hold off till my wife is ready to eat with me.
