I love Lexington style sauce on my pulled pork.  Just smoked a butt two weekends ago and served it with a sauce very similar to above, but with a minimal amount (2-3 tbs) of ketchup.  It takes some of the sharp edge off of the vinegar-only sauce, but isn't thick and sweet like a memphis style sauce.

This is a version of Lexington BBQ dip

2 cups cider vinegar.
1 tablespoon salt.
1 tablespoon ground white pepper.
1 tablespoon red pepper flakes.
2 tablespoons white sugar.
1/4 cup dark brown sugar.
1 teaspoon freshly ground black pepper.
1/2 cup ketchup.

They serve it warm on the side in a little styrofoam coffee cup.
You can use a little water in the vinegar to cut back on the acid.
They use a 40 grain cider vinegar.
Common vinegars are 50 grain.

I really like a finishing sauce.

My buddy says I’m a cheater because i mix about a 1/4 of finish sauce and a few dashes of rub in with the pulled pork. Not always but a lot of times.

It adds a little flavor but you can’t tell there’s anything added.
