More Aldi butt

2 boneless butts. I butterflied them a little more. I haven’t tried this method yet. More bark more flavor hopefully. This was just a couple hours in. The 26” has been holding steady around 290.

I seriously don’t know how anyone gets by without a 26. If something happened to mine, I would be in line the next day paying full retail.

I dont have a charcoal grill, but im considering selling my WSM and buying one. A 26 would be more useful overall than a WSM for me I think

Dude, almost any charcoal grill would be better than a gas grill. Get a 22 or 26 yesterday.

I went to 197 internal. But these were Stubborn. I should have went longer

I liked the overall product with more bark and flavor.

A couple vac bags headed to the freezer. I can’t wait for these. The vac bags seem to amplify the flavor.

I apply a base layer of kosher salt and coarse black pepper then I applied hogs n heat mild and savory which is awesome stuff. You would be surprised what a difference that base layer makes. I always do that first regardless of what rub I use.
