Pulled a tri-tip out of the freezer for today.  Rubbed and injected and waiting on the smoker to come up to temp...

Looks nifty.

At what temp did you pull it off of the machine?
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

I pulled it off at 138°.  I got busy and forgot about it.  I wanted it off around 130°.  It was still pretty tasty!
My wife made a food tray for a party that fell through.  Worked out well for me!




I realized I was slicing with the grain right about the time I realized I'd had 7 of those beers. :P
