First go at pastrami

Like @billham I gave pastrami a go this weekend.   Started with a 14 lb brisket,  mixed up a dry cure and coated the brisket. Eight days later I smoked it on the 18.5 WSM to a internal temp 165°. Then steamed it in the oven until it reached 203°.



Very moist. Wouldn't change a thing.

Wow, that looks great!  It looks like your cure did what it's supposed to do through the entire chunk of meat!!!  Well done!

Maxm, what temp did you pull off smoker? I have one going right now and plan to pull off around 155 then into steamer to same temp you finished with. Yours looks delish. Hope mine turns out as well, only I didn't cure myself-started with store bought corned brisket.

Maxm, what temp did you pull off smoker? I have one going right now and plan to pull off around 155 then into steamer to same temp you finished with. Yours looks delish. Hope mine turns out as well, only I didn't cure myself-started with store bought corned brisket.

I used a 9 x 13 pan with a wire cooling rack in it. I put about 3/4" of water in the bottom and sealed it up with aluminum foil.  Set the oven on 300° until the meat temp hit 200°.  Hope that helps.
