These are real easy to do. Leftover cooked rice is your friend.
However, there is really no right-or-wrong with what one can put into these. Anything goes, I say.
I added half a can of black beans to the rice, along with some salsa, cubed cheddar cheese, and some seasoning.
I really pack it in there. I don't mind bell peppers, but I prefer sweet, coloured peppers.
More often than not, they will not stand up properly. So, I make a foil donut of sorts to help prop them up. Works good.
Indirect until the skin starts to wrinkle. In this case, it was about 45 minutes at about 325-350°.
Probably could have left them on longer, but I hope to refine this for future cook-ups.
I put some mango halves on. These were fantastic! Also put scallops on for a quick sear.
This meal was delicious! Very hearty and filling.
