It's been a while. This is some of what I've been up to.

I roasted a lamb leg that I had stuffed with aome garlic and herbs. The pan drippings made great gravy.


These were accompnied by some bacon wrapped potato tots with jalapeņo cheese.


This is a new accessory. It's called a Flip'N'Grate. It's awesome for cooking a flattened chicken.


I spatchocked this bird nd rubbed it with a jerk mix. I hve to say, this was one of the best chickens I have ever done.


I wanted to try a duck. So I used my JD mini.


It looked sensational.


It was good....but next time I'm going to try and hang it to render more of the fat out.


Beef cheeks was also something I hadn't tried. A simple S&P rub and. Few hours on the mini.


I made a simple red wine jus to fo with it. Other than being too heavy on the pepper, it was great.


A couple of big tomahaks were also reverse seared.




It sliced up beautifully!


Even the bone was devoured! 😁


Did I mention there were turds?


I also tried slow cooking a hanger steak. I wrapped it with a ghee and stock mix and was gooood!


Last night I didn't want to cook. But I still wanted fire. So firepit and scotch was called for.

Great looking food. The "Beef Cheeks" in particular look awesome. I've never heard of beef cheeks before.

Stabbing the duck all over with a skewer half way through the cook to render more fat, works well for me

Bear, I'll keep that in mind. I did poke a bunch of holes in it with a fork before cooking it. I'll try it whilst cooking next time.

Where did you get the beef cheeks?  I LOVE beef cheeks but can't find them anywhere nearby...local butcher hook you up?
