We've been spoiled with some really good weather lately and I've been taking advantage of every second of it
Last nights dinner was some bacon wrapped fillets served with fresh corn and shrimp on the side.
The three tenderloin steaks were dusted with big poppa double secret steak rub then wrapped in applewood smoked bacon. After allowing the meat to come up to room temp I submerged the complete wrapped steaks in Lowry's Meat Tenderizing Marinade. This stuff is magic on tenderloin, more for the flavour it adds as opposed to tenderizing.
26r all ready to go... BIG surprise also making some corn
Bacon and beef coming along nicely...
The coconut and spicy breaded shrimp were just from a frozen appy I picked up at the grocery store but turned out great. Served alongside Sweet Chili and Tiger sauces...
A really tasty meal perfect for a nice summer day!
Thanks for looking,
Matt
