That's incredible, I had to watch a couple times but with practice I think I could get pretty close. I worked for the animal science department at UC Davis in college. We did slaughter to sales of beef, pork, and lamb and I got a few years of butcher training. I'm rusty though....

I used to live in Davis a long while back. My dad managed the phone system back when phone systems needed managing. loved that place!

My first job was a meat carver at Boston Market. That's pretty close how I learned to carve a chicken but we did it after the chicken was cooked.

I remember watching his show on TV. Back before any of the cooking channels existed.
