Steelhead with Porcini Linguini

Fresh farm raised steelhead looked like a good tag along to the pasta. There was a green salad that we are while the fish was cooking. About 25 minutes 350-375 and some Costco pesto for the pastas.

Picked these up at the local farmers market and was not disappointed.

... and the idea of reusing the pesto bowl... brilliant!

Speaking of mushroom dishes - I hear you created a mushroom fattie (or was it tenderloin?) that blew some peoples minds at a Socal meet awhile back?

Any chance you'd share some tips? 8) ;D

Commence drooling :) I owe Troy a write up for this as he stated "this is the best fattie I've ever had". Humbling to say the least, I will get this done before summertime. I'm playing with the idea of a stickier cheese to help it keep together better but the goat is so good. The one we had at the socal meat up wasn't quite this photogenic but just as tasty.

^^ Now that's pretty damn funny...

They don't sell Jimmy Dean here in Canada BUT I literally just got home from a trip down to WA state for the sole purpose of buying some Jimmy Dean Sage - ;D A buddy of mine has a "secret" baseball sausage recipe that he wont share but I'm pretty sure he let it slip one time that it at least included some JD Sage. This stuff he turns out is like straight crack - I need to figure our how to make it! Needless to say I picked up enough to make the sausage balls AND your delicious looking fattie so I'm pumped. 8)

... get this, I even tried bartering with him and offered him a clean black Performer for FREE if he would share the recipe. Bugger didn't even flinch and I know he wants a kettle! So now it's time for plan B - come up with my own damn recipe.  ;D
